I wasn't at all sure about the concept of an omelette filled with coleslaw but in fact it came out fine; I think the avocado dressing is what made it so. I've since had the coleslaw again with a hamburger, marinating the onion and chilli in the lime juice for an hour or so which for me was an improvement.
