I tried this because our mixed veggie box was leaving us with a lot of carrots in the fridge and I was looking to add a colourful side to our curry. The prep was really easy, grating carrot and quickly frying some spices in oil. I was really surprised by the result. I thought that with the carrot and honey it would be really sweet, but the sweet/sour/spicy balance is just right. It's a really lovely dish, I'll make it again and am looking forward to eating the leftovers tomorrow.
