Great easy way to satisfy a craving for tacos all wrapped up neatly in a casserole. I used black beans instead of pintos since son prefers those. I topped ours with the suggested lettuce, tomato and green onion and upon hubby and sons request also added some sour cream and salsa when we ate ours. This is one of Christy Jordan's recipes from her Southern Plate Suppers column in this magazine. We loved it and I'll be making it again I'm sure.
