The fish turned out moist and perfectly cooked at the 18-minute timepoint, but the crumb coating was not all that great, and it took a lot of work.
If I make this again (and I might), I will use Panko instead of making whole wheat crumbs. I will also increase the spices in the egg batter. This will turn it from a one-hour hand-on prep time recipe to about 10 minutes of hands-on time. It is certainly a lean fish dish, and that I did appreciate.

I completely forgot to review this recipe! Yes, making the bread crumbs took a bit of work/waiting time. I actually loved the coating of the fish, and I used fresh herbs. I use wild-caught Pacific Cod. I blogged this recipe two years ago. I'm providing the link, in case you'd like to see my step-by-step photos and how it turned out. I was happy with the "crunch" without deep frying. I need to make this again!

Beautiful photograph! I used wild-caught rock cod, possibly the same thing? It was really nice to not have the frying.
