Here is the perfect fall appetizer. Small rounds of sweet potatoes are roasted into soft delicious pillows of orange delight, and topped with a salad-like mix of celery, nuts (I substituted walnuts), goat cheese, dried cranberries, etc.
I roasted mine using avocado oil and on top of parchment paper. They turned out beautifully. The crunchy top was the perfect complement.
I served these along side this cocktail.

Oh Wow! These sound delicious. My daughter and I love savory sweet potato dishes and goat cheese and dried cranberries too. Got to make this one.
