This was a revelation! I tried it because I had a huge hunk of Maytag Blue which had been hanging out in my fridge for a long time. And I was curious as to whether this combination of sweet caramelized onions (mixed with lemon and balsamico), a blue cheese sauce and pasta would work. It works! As noted, I used Maytag blue, not gorgonzola which would be even creamier. And I made little buttery croutons for the top instead of just breadcrumbs. Otherwise, I did as told--and what good results!...
