Butternut Squash, Arugula and Bacon Quiche

Very nice. The combination of butternut squash, onion, bacon, rocket (arugula) and cheese is a classic and always works well. The only minor issue is that because all of these ingredients are baked, you won't actually taste the rocket, especially not it's trademark bitter tang. Serve each slice on a bed of rocket to make up for that; alternatively, you can also opt for fresh spinach instead of rocket.

I've never before made a quiche filling with flour and baking powder. It was actually quite nice; I'm sure that the filling rose and also felt lighter than usual, but I also think that precisely because it rose, it was too much egg in relation to other ingredients. A bit more butternut squash, bacon and especially rocket (or spinach) would work very well.
