I used some of my leftover Thanksgiving dark turkey meat for this as well as leftover giblet gravy, stuffing, and cranberry sauce. It was delicious on the sour dough bread with Dijon and Swiss cheese. I grilled mine and daughters since I don't have a panini press. Of course the guys thought it disgusting and wouldn't touch one. A little messy to eat but so delicious. This may become an after Thanksgiving tradition. The recipe is also available on foodnetwork.com at the following link:
