Creamed Spinach with Jalapeno Peppers

Another 5 star; not as spicy as you might guess (but you can fix that if you like). Creamed spinach with a kick! Finger-licking (spoon-licking) good. Has become an annual thanksgiving side, and each time I think why don't I make this 20 times per year?? have made with both fresh and frozen spinach; I prefer the fresh so that I can leave it a bit more hydrated. have also used both pepper jack cheese AND jalapenos, to spice it up, but there is enough fat in there from the cheese that it always rounds it out.
