Christmas Breakfast Casserole

Each year for our Christmas breakfast I try to find a new breakfast casserole and fruit dish to serve for our breakfast. This one even has a fitting name for that. It was delicious and just as good reheated a few days later for another breakfast. I enjoyed that this one has sweet Italian Sausage in it as well as extra sharp cheddar, mushrooms (I used Baby Bella), tator tots and a few other ingredients and that it's topped with sliced tomatoes and parsley. Red and Green, perfect for Christmas 2013.
