Pretty good for minimal effort; a good recipe for using up odd bits of leftover veg.
I used spaghetti and think that or linguine would be the best pasta. Or whatever you have.
Followed this recipe, more or less, for dinner for two with 7oz spaghetti. Used a 200ml carton of coconut milk, and 3 heaping tablespoons of red curry paste. No Thai basil (never seen this in my corner of France).
Easy and yummy, if you like red curry paste.
