Delicious but oh so rich!

My first bite was pure heaven. The eggplant roasting instructions worked very well. I also roasted about 1/2 lb baby bella mushrooms, and tossed into the pasta at the same time as the eggplant. Also substituted wagon wheels for spaghetti (my daughter's favorite pasta shape).

I will probably try this again, but with less butter, maybe substituting some tahini in its place.

This recipe is decadent, but very delicious! I used brown rice spaghetti, and it worked wonderfully. I will certainly make this one again.
