Another hit with the family. This was part of our Christmas 2014 supper. I used pomegranate flavored crasins instead of raisins. There are two layers of regular cake and two of spiced with the the crasins, nuts and spices. The icing was fresh coconut, lemon juice and zest along with a few other ingredients which are boiled for seven minutes. I added two small candy canes on top for decoration.
