These are very delicious muffins. I have used apples from my friend’s tree, or regular supermarket apples and also replaced 1 egg with a flax egg I also used about half the amount of raisins and nuts. Didn’t peel the apples which was fine. These have now gone into regular rotation. Excellent muffins.
