This is a great salad or side dish. It's in the "Mix and Match" category of the cookbook, meaning it would make a great main dish if served with a veggie and protein dish at the same time. Everyone loves it -- vegans and non-vegans alike. The flavors have a great dynamic (lime, mint, cinnamon, cardamom) and the apricots and pistachios make the dish taste "special." I always use unsulphured apricots because they taste great and have no added sugar.
