This is one of those books that's just a collection of recipes with no background info, so I'm not sure what's particularly Tanzanian about this dish but it's very good. I used whiting fillet (on special offer) which was fine though a firmer fish would have given better texture. My only issue with the recipe as a whole was the curry powder which I'm not keen on (no problem with the taste but the smell seems to hang around for ages) so I'd probably use a combination of individual spices next ti...
