The flakiness of lard and the flavor of butter. This is a wonderful crust for both sweet and savory pies. Not sure if it was the heat of the kitchen or the recipe, but it was very "soft" and I was afraid it would be a mess to roll out but there were no issues. Made for the Nectarine Blueberry Pie (page 119) and for a Chicken Pot Pie.
