Quick and simple recipe for home-made lemon curd/lemon butter. Make sure eggs are at room temperature to prevent curdling. Keeps in a sterilised jar in the fridge for up to 2 weeks. Variations include orange, mandarin, blood orange, lime, passionfruit, pineapple or raspberry. Fruit-flavoured curds can be used in tarts, puddings, ice-cream and cheesecakes, or as a spread on toast.
