Fine Cooking magazine does a nice job at coming up with recipes that work well on busy weeknights. This one is really quick -- you don't even need to halve the cherry tomatoes. Lovely mix of flavors with a nice kick from a bit of chopped pepperoncini. Any oil packed tuna will work but I prefer the Italian or Spanish products (Cento or Ortiz).
As written the recipe serves two but is easy to double.
