Gingered Lemon Bars

Lemon squares - can't go wrong, right? This is a pretty straight forward recipe, but with one crucial difference: the shortcake base contains candied ginger.

As with most ginger-containing recipes, I think the ginger should be doubled. None the less, at worst, these are like standard lemon squares. But at best - those occasional bites with lots of ginger - the lemon-ginger combination is amazing.

I prepared these for a college care package for my son. The lemon-ginger combination is great.
