I quite enjoy this recipe, but I've mucked with it a bit so can't give it four stars. Normally I add more egg and cook the filling either in a pie crust (so, like a quiche) or using the yeasted tart dough and cooking it as a galette. Good, flavorful olives make all the difference here.

Disappointed in the empanada which was very bland....maybe needed lemon thyme in the dough?

The spinach mixture on it's own was good and quick but as a whole, this was a lot more work than it was worth.
