Pork loin is so lean that its easy for it to end up tough. This recipe does a good job of enhancing the flavor with a fennel seed-garlic-thyme rub. The pork is roasted in the same pan as apples and onions (and we also added sweet potatoes). This was really nice, they picked up a bit of the fennel flavor, and the fat led to nicely browned bits on some of the onions. I think it would be even better with a slightly fattier cut of meat. For me, the recipe's suggested timing was perfect.
