Prepared for Christmas Eve dinner for 25 - succulent and delicious. The rub (including shallots and anchovies) was applied the day before, and roasted slow (275). I used the temperature probe for the oven, which worked flawlessly. Very excited for the leftovers.

I've done this same sort of thing from Nigel Slater (<a href="http://www.cookbooker.com/recipe/14563/slow-roast-lamb-with-chickpea-mash">Slow-Roast lamb with Chickpea Mash</a>\>). It's amazing to pop the leg in the oven and go out for the day, to come home to such delicious smells and wonderful meat. Ordinarily, I like my lamb rosé, but cooke slow it's still tender and delicious.
