Holiday Slaw

This prepares a beautiful salad, perfect for that holiday party, or even just your family. Roasted butternut squash, kale, red cabbage, etc, are dressed with a somewhat complicated dressing that includes roasted shallots. Note that the shallots can roast alongside the squash.

The combination of colors is absolutely stunning, and the flavor is almost as good. I prepared this dish twice this holiday season. The first time I skipped several ingredients as I ran out of time, and the second time I got most of them, but again ran out of time. However, each salad was still met with great pleasure and appreciation, and both times it looked stunning. The other great thing about this salad is that it keeps well. The leftovers from salad #2 were refreshed with a bit of new kale and the forgotten red onions, and brought to yet another potluck - and it was the first item on the table that was polished off.
