This is warming and delicious. I have used this basic recipe/technique for various potato based soups and it always comes out velvety smooth. I like that it does call for cream or milk (in the hot version at least) and I can even get away with cutting the butter down to 1 tablespoon. Most recently I subbed the leeks for jalapeños to make a potato-jalapeno soup.
