This is really a review of the yogurt-mint dressing as I added tomato and red pepper as well as cucumbers and I used a "crisp lettuce" mix instead of spinach.
I was expecting a pretty good dressing as this is a Ben and Karen Barker recipe and they are the owner/chefs of one of my favorite restaurants, the Magnolia Grill in Duham, NC (the persimmon pudding there is seriously delicious if you are in the neighborhood).
