This was like a fake out risotto that tasted almost as good as the real thing. Overall, I thought the dish could use more seasoning, but it was a really simple weeknight meal. The recipe calls for trout, but says you can substitute chicken. We went the easy way out and used precooked rotisserie chicken to save even more time.
