This is a Cuban meatloaf and after forming and rolling in cracker meal it's allowed to sit in the fridge for an hour before being simmered on top of the stove in a tangy tomato sauce infused with garlic, bell pepper and onion. The meats that form the loaf are a combination of beef, pork and honey ham. There is also a nice little suprise when you slice and serve it up sliced olives hidden inside.
