I checked out Fire in My Belly by Kevin Gillespie from the library and have marked several recipes to try. Of course I had to try his version of mac and cheese first and it was fantastic. Who'd have thought to top it with crushed potato chips before baking. No flour either only lots of heavy cream, velveeta, smoked cheddar, gouda (I accidently got Swiss so went with that) and Parmesan, along with diced andouille sausage.
