This recipe is a bit involved for garlic toast, but if you happen to have Garlic Confit and Oil (p 266) leftover from another recipe, this recipe is super easy to whip up. I love the extra garlic flavor the garlic oil adds. This was great as part of a Mezze platter with tapenades and soffrito.

I won't say that I would make this very often as it requires 1/2 cup of olive oil for 3 pieces of toast (and only 1/2 piece of toast per serving). But it was yummy and I did eat more than my allotted 1/2 piece. Hello, calories!
