Grilled Cheese Sandwich

I have never really been wow’d by grilled cheese before, so I was eager to try to see if Chef Keller could change my opinion of grilled cheese. This recipe uses his Brioche (p 272) recipe for the bread. I baked the Brioche (p 272) (beware it takes 1 day to mix and proof and baking occurs on day 2) and used it for Grilled Cheese Sandwiches after having cooled for 10 minutes.

This is the best grilled cheese sandwich recipe. It is super simple and I love how it is finished in the oven to melt the cheese. So smart! Excellent recipe. I only wish I had some tomato or French onion soup to dip it in.
