Ice Cream Sandwiches

I have tried to make ice cream sandwiches before and I never really found the perfect cookie and the perfect method for making ice cream sandwiches. I love this recipe because it solves both. The perfect cookies are shortbread cookies. I made both Mint Chocolate Chip Ice Cream (p 320) with Chocolate Shortbread Cookies (p 330) and Vanilla Ice Cream (p 327) with Shortbread Cookies (p 327). I love the method to lay the ice cream out so it can be easily cut for ice cream sandwiches. When frozen, the cookie and ice cream combinations are perfect.
