Ingredients:
  • 2 T olive oil
  • 1 C cooked chickpeas
  • 1/2 C vital wheat gluten
  • 1/2 C bread crumbs
  • 1/4 C vegetable broth or water
  • 2 T soy sauce
  • 2 cloves garlic, grated or pressed
  • 1/2 tsp lemon zest
  • 1/2 tsp dried thyme
  • 1/2 tsp Hungarian paprika
  • 1/4 tsp sage, dried rubbed
Notes: mash chickpeas with oil, till no whole chickpeas. Add remaining ingredients, knead for 3 minutes till strings of gluten have formed. Preheat heavy skillet, divide dough into 4 pieces, form cutlets by kneading, sretching into 6 inch by 4 inch rectangle. Make rectangle in hand, and then put on clean surface to flatten and stretch. thin layer olive oil in skillet, pan fry 6-7 minutes one ach side, till lightly brown. Can also bake - 375 20 minutes (brush oil on first), flip, and then another 8 - 10 minutes.

Very chewy and moist and super flavourful. Paired with the mustard sauce like the cookbook recommends tastes very gourmet. They also taste great as a burger patty. Extra points for being really easy to make. Just squish everything together in a bowl and fry!

Jayme, I've never tried these with the mustard sauce. I make them frequently and we like them so much we often just pick them up (wrapped in a napkin) and chomp away on them plain.

These cutlets were unexpectedly delicious. I panfried them a little too long and even though they were a little crispy on the bottom, they remained chewy and flavourful. Next time I will make a double batch because our family devoured them.

Maybe I did something wrong...
...but for me, this was fine, just not great or awesome.
I was impressed at how nicely the dough came together. A bowl that looked impossibly dry, after a few minutes, mixed into a somewhat stiff dough that I easily kneaded. I timed the 3 minutes, divided, and flattened into "cutlets".
Cooking took place in a cast iron pan. I noticed these were not sticking, and I didn't add much oil (none after the first side). Maybe more oil would have given these a...

Maybe these are the type of thing that grow on people? When I make them, I usually double the recipe, especially if I'm using canned chickpeas so I can use up the whole can. I never bother kneading for 3 minutes either - LOL! I ususally just squeeze all the ingredients together with my hands once the chickpeas and liquids are well mixed. I may actually be altering the ratios of ingredients slightly so they are moister on the inside and crispy-chewy on the outside. I'm sorry these didn't wow you. I love the hints of lemon zest, garlic and thyme when I bite into these.

I'll probably try them again. I was hoping I'd hear some ideas from you. Next time I'll make them moister, and up the lemon zest and spices. On reflecting, I also think this might be a better winter dish, something to make when we don't have all the great local produce. Leeka, do you eat these as cutlets, or in a sandwich? I served them as if they were a veal cutlet (on the plate), but putting them into a sandwich might be better for my family. Thanks for your comments.

No problem, I'm glad to help! I think you're right about these being a winter dish. And I always play around with recipes like this once I find one I like. We started out eating these as a cutlet served on a plate with sides but now when I make them we tend to eat them as finger food, as a snack or even in a wrap. You can slice them up with some kind of hummus, sauce, salsa etc. and chopped tomatoes and other veggies rolled up together. I usually throw them in the toaster oven to reheat them for a few minutes if I'm eating them this way the next day. I've made the patties smaller too, like flattened falafels. I hope that helps. By the way, I have the Cheater Baked Beans in the oven right now! I can't wait to try them.
