This cake is wonderful. I actually had my doubts that the fresh cranberries and orange juice might not work and that the cake would be too soft to stand up to the fruit and caramel. It works beautifully and it looks gorgeous. The little bit of extra work (separating the eggs and making the meringue) results in such a lovely texture. And really it's not that much work--I think it took me about 20 minutes to make the caramel, cook the fruit, make the batter and get the cake into the oven. I... Read more
