We enjoy a good mushroom barley soup and since I've been wanting to try some recipes for the Moosewood Challenge and had all the ingredients on hand for this one I decided it was the best place to begin. I was a little skeptical that this would be flavorful since no broth or stock was called for but I think sautéing the onions, garlic and mushrooms and the addition of soy sauce and sherry gave it a wonderful flavor.
