I never thought of making my own croutons before. This is mostly because I am not a fan of store bought or even restaurant quality croutons. Since I was already making Brioche (p 272) for Grilled Cheese Sandwiches (p 288), it was pretty easy to whip these up for the Iceberg Lettuce Slices (p 150). These were better than any croutons I have had before mostly because of the homemade Brioche. I think I will always keep some Brioche for use in several recipes.

These are very good. When you cut the crust off, save the slices to use for a sandwich. My croutons took much longer to cook than indicated. Just watch them carefully.
