This is a nice spiced cake that greatly improves the humble persimmon. Not being a fan of persimmons, I did not expect much but as the cake baked and the smell of spice and maple wafted through the house I started to get interested. The presentation was beautiful, the cake was tender and moist and the flavor was excellent. Perfect for an autumn celebration. This did bake a bit quicker than the suggested 45-50 minutes.
