Miso in a cheesecake?? You bet! I do not really care for cheesecake, but this thing was amazing. Only a bit of white miso, but it added an umami note that was there if you looked for it. What was also nice is that it was not terribly sweet. We used a combination of raspberries and blackberries, and skipped the sieving step to remove the seeds. And I should not be saying "we" but "he" - this was prepared by my son, who is home from college.

This sounds interesting. Did they actually use cheese? It's not typically featured in Japanese cuisine.

It is an unusual recipe - and yes, it does use cream cheese. This cookbook's recipes are more fusion than truly Japanese.

Thanks! I looked up the cookbook on Amazon and couldn't tell for sure. It sounds like an interesting book. (I hope there if there are recipes for that bean "candy" that they are fusion. Someone convinced me to try it once, and it made me gag.)

I don't know about the bean candy...
I was able to find this at my library - but I am lucky to be living in a place with lots of libraries and good coverage of cookbooks. This is an unusual book!

That's great about your library! I work for a library software company.
The internets tells me that the bean candy is "yokan." I think you must have to have eaten it from birth to get the appeal. Otherwise it's overly sweet gelatin with a kidney bean surprise in the center.
