Summer Squash Enchiladas

Excellent dish. Homesick Texan has written many great recipes, but I'll review this one because it covers a few categories.

Summer Squash - who isn't overloaded with these during the summer? This is an inventive way to use them and even friends of mine who claim to dislike squash like it here. I'd also use the filling as a side dish.

Enchilada Sauce - this homemade version is fast (as homemade enchilada sauces go) and is good, but I might add a few more touches of spice (for flavor not heat) and salt to deepen the flavor.

Overall, I will certainly make this again.
