This is a detailed protocol for making Mozzarella. It has useful step-by-step instructions, and turns out delicious cheese.
Note - when taking the temperature of the curdled milk, after heating and adding retin, the whey will be much hotter than the curds - so measure the whey's temperature! Also buy thick gloves that can protect you from the heat of the curds at the stretching stage.
