The author suggests this can be eaten as a meal any time of the day, but for my husband and me it is great as a late Sunday morning breakfast/brunch. I only used one big red onion instead of two, as suggested, and two small red peppers instead of one and the sauce had a nice fresh flavour which went very well with the eggs and cheese.
