This is healthy and tasty and does not take a long time to cook, making it good for a weeknight. I did find getting the timings between the two pans on the go to be a bit of a balancing act as there was always something going on in both, but I suppose as the book is called "how to be a better cook," it is a good lesson in timing! I halved this recipe as I was just cooking for two, though I might not halve the sauce ingredients so much next time as it was a bit light on the sauce front.... Read more
