I thought these were outstanding. Easy to make - hard to mess up (a good combination) and very tasty. Recipes says to let caramel sauce cool - I would let it cool SLIGHTLY. I ended up reheating mine as it just got too thick to drizzle. I served to a small group of girl friends and at my son's lacrosse banquet - everyone liked them.

Rich, chewy and decadent. You actually blend cashews to make cashew butter and that forms the base of the cookie. SO good.
