This was a delicious sandwich for a special lunch --- but definitely not a low-fat option. FC has a really simple apricot jam recipe (available online at their website) and that is what I used for this sandwich. It worked really well. I used a thick-sliced sourdough from Panera for the bread and it also worked well.

Served with a side salad but will try this again when the cold weather comes with some kind of soup, maybe a vegetable beef or lentil soup (possibly the one from Zuni Cafe?).
