Cherry Almond Muffins

Ingredients:
- 4 oz butter
- 1 c sugar
- 2 eggs
- 2 c flour
- 4 oz milk
- 2 t baking powder
- 1/2 t salt
- 2 c cherries
- 1 c almonds
- 1 t almond extract
- granulated sugar
Notes: Cream butter and sugar until fluffy. Beat in eggs, one at a time.
Sift together dry ingredients and add them to butter/sugar mixture alternately with milk. Stir in almond extract, then gently fold in almonds and cherries.
Spoon muffin batter into 12 greased muffin cups; cups will be quite full. Sprinkle each muffin with a little granulated sugar, and bake in a preheated 375°F oven for 30 minutes, or until muffins test done.
sub oil for butter--1.5 = 12 texas muffins

A nice muffin but a bit dry. I subbed canola oil for the butter and added a bit of the cherry juice, but I think it still needs a bit more fat (oil or butter). I also think it's too sweet. The batter seemed so sweet to me that I decided not to add the sugar on top (I would have used sanding sugar instead of granulated). Next time I'll reduce the total amount of sugar and use a combination of brown and white.
