This chicken salad is a bit different from the ones I usually make but oh so good and I intend to make it again and again. I used some leftover chicken from the Rosemary and Thyme Roasted Chickens from Dollars to Donuts cookbook. I was a bit skeptical at first about the BBQ sauce and mayonnaise dressing but it is delicious. I love that it also has bacon, lettuce and tomato.
