I'm not sure what makes this "Thai," other than the rice vinegar, but this is a tasty and handy recipe. I have substituted apple cider vinegar successfully. This method also works with other veggies, such as zucchini.

Great way to use up the cukes from the garden. Wonderful with Grilled Thai Chicken Breasts from Cooks Illustrated.
