I had some leftover asparagus so I used Eat Your Books to find a recipe that included asparagus and eggs and came up with a few. I decided to try this one first and it made for an easy work day breakfast that was delicious. I had all the ingredients on hand butter, olive oil, eggs, asparagus and Parmesan.
