Camarones al Ajillo (Shrimp in Garlic Sauce)

Ingredients:
  • 1 c olive oil
  • 16 large shrimp, peeled and deveined
  • 10 garlic cloves, peeled and cut into thick slices
  • 1/4 c freshly squeezed lime juice
  • 1 1/4 t salt
  • 1/2 t pepper
  • 2 T chopped parsley
Notes: Heat oil. Saute garlic and shrimp about 3 minutes. Add lime juice, s & p. Saute about 2 minutes more. Remove to plate an sprinkle with parsley.

Man these are good! And they could not be simpler--saute shrimps and garlic in hot oil for about 3 minutes; add lime juice and salt and pepper and guve it anothe minute or two. Done! I scraped the shrimps and sauce out of the saute pan and poured them over rice, sprinkled the dish with parsley--what a meal!
