This makes a good vegetarian dish. It is not a dish that originated in India, but it is nicely Indian-inspired. I do not come back to this dish over and over like I do a few others in this book, but when I have had it, it has been good. The apples and shredded coconut throw the flavor and texture off a bit, respectively. The apples are too overtly, and oddly, sweet here.
